When people find out I am on a low carb diet, they instantly say, "Oh, I could never do that.", when in actuality, low carb is not that big of a deal. There are substitutes for every thing you think you won't be able to eat again. Subs for cake, subs for pizza and even subs for pancakes. Yes! I said you can eat pancakes on a low carb diet!
This recipe is super easy. All you need is...
2 eggs 2 oz cream cheese 2 tsp Splenda 3/4 Tbsp Baking powder Pinch of salt Pinch of cinnamon Blend all ingredients well. (I use an immersion blender and it works perfectly) Let the blended mixture set for a few minutes until some of the bubbles are gone. Fry in a med-hi skillet for 2 minutes while covered, then flip and cook for another minute or so. You will know when it's ready to flip by the bubbles in the center, like a regular pancake. Serve with sugar free syrup or as is. Or you could make your own syrup with some butter and a little Torani syrup, the brown sugar/ cinnamon would be really good with this recipe. Just boil the two ingredients down until they are a syrupy consistency. You could also use this recipe for crepes, just use a crepe pan instead of a skillet. Also, you could increase the recipe to make enough to feed more people, because if your kids are moochers like mine, you will need it. To increase, just add 1 egg and 1 oz of cream cheese in equal ratios. Ex: If you have 3 hungry kids and 2 hungry adults, I would suggest using 7 eggs and 7 oz of cream cheese.
You know that awkward moment when you almost forget you have a blog...yeah, that totally happened to me. Once upon a time, I would have never forgotten to update my blog at least twice a week or even more, but then life happened. Nothing bad, nothing majorly life shattering, just life.
Grocery shopping, homeschooling, trips to the park, fishing with the family, disagreements between siblings, puking in trash cans at midnight (the little one, not me) lost toys, dirty dishes, clean clothes... all that stuff. The stuff that happens while you're waiting for the big stuff to happen, that's my favorite stuff. The stuff that often feels mundane or boring, that's the stuff I thrive on. Some people waste their whole lives waiting for something exciting to happen, the next thrill; the next big thing and often times, it never does, so your whole life was wasted, waiting for the next big thing that never came. I refuse to let that be me. I (try to) embrace the normal stuff and turn it into something extraordinary. Every day, no matter how routine it seems, has the potential to be something special. Yes, every single day we are presented with opportunities to make something special out of nothing. How, you ask... magic. OK, not really, but wouldn't that be nice?! This will actually require a little bit of work, at first, then it kind of becomes second nature. So, what is the big secret... NOTHING, there is no secret. The secret is, don't be a dick, don't take yourself so damn serious and have some fun. (Not necessarily in that order) "But I'm a stay at home Mom, all I do is clean house and wipe butts all day, how is that "special"?!" Truth is, it isn't special, you have to make it special or at least make it special-ish... special adjacent even. Washing dishes gettin' ya down... crank up some music and cuss your family, in your head, for never remembering to rinse first. Tired of reading the same book 87,000 times, give every character a Sean Connery voice. Sick of hearing the kids argue over the same stinkin' toy... make a few pb&js, throw a blanket in the back (front) yard and call it a picnic. (then while they are distracted, hide the offending toy, then deny any knowledge of its location) Seriously though, don't ignore the little things in life while waiting for the big ones to happen, because one day you might wake up to realize the little things were the big things after all. Time 4 Learning allows you to pick and choose levels, based on your child's needs and they offer all levels, up to high school. We used some 2nd grade lessons and some kinder lessons, with no problem whatsoever. You can assess your child's level of readiness and then assign grade levels from the parent's section of the site. A lot of first time home-schoolers can get very overwhelmed with lesson planning, gathering resources, vetting materials for kid-friendliness and all the other things that go along with trying to make sure you are covering everything you need to, while still having fun. T4L does all the work for you. If you can log on to a PC or tablet, you can use Time 4 Learning. Their handy dandy parent tools section is packed full of information you can use to make your home-schooling adventure a success. Can you believe Easter is less than two weeks away?! Only twelve more days until the kids can get all dressed up in their finest clothes, fix their hair just right, grab a pail and shove their younger cousins out of the way, in hopes of scoring the coveted, second to none, peanut butter egg... Ok, maybe that's just me, but I digress.

When choosing Easter decor items for a kids' table, keep a few things in mind. Most of all, it has to be fun and second, it has to be practical. No huge vases of flowers that might get knocked over and nothing that might get eaten by a curious little one and use lots of colored eggs, you can never go wrong with pretty colored eggs.
Since kids are very visual and tactile creatures, I used a lot of textures and added some bright colors for this look. Everything pictured is a kid-friendly material; plastic or melamine, with the egg-ception of the Nestler egg cups, which are earthenware.

Have you ever seen something that was such a great deal that you just couldn't pass it up? You didn't necessarily have a need for the item and honestly had no idea what you're gonna do with it, but you went ahead and bought it anyway? Yeah, me too. Last weekend, as hubby and I were looking for some last minute ingredients to complete our Super Bowl menu, I stumbled across some sugar free strawberry glaze marked down to .39. I had to get it. Who passes up thirty nine cent sugar free strawberry glaze... apparently not me and so began my quest to find something to do with aforementioned sugar free strawberry glaze. Of course strawberry shortcake was the most obvious answer, so I decided to try my basic mug cake recipe, increase the vanilla, then top with fresh whipped cream and the s.f. glaze. It was pretty darn good. Definitely calmed the sweet craving, without much guilt. (6 net carbs) Honestly though, I am still not very fond of the aftertaste of the glaze. It just tastes very "artificial" to me. It's definitely not the strawberry shortcake flavor you remember from your childhood... unless your Mom or Dad was diabetic, but it is still really good for when you need a sweet treat.
*If you don't have liquid, you can always use the packets or granulated, but it will add hidden carbs. * The glaze should be in the fruit and veggie section of your grocery store. |
